{"id":22975,"date":"2021-05-12T10:45:59","date_gmt":"2021-05-12T08:45:59","guid":{"rendered":"https:\/\/www.terredipisa.it\/?post_type=ricetta&#038;p=22975"},"modified":"2021-05-12T10:45:59","modified_gmt":"2021-05-12T08:45:59","slug":"bordatino-alla-pisana-pisa-style-cornmeal-soup","status":"publish","type":"ricetta","link":"https:\/\/www.terredipisa.it\/en\/ricetta\/bordatino-alla-pisana-pisa-style-cornmeal-soup\/","title":{"rendered":"Bordatino alla Pisana &#8211; Pisa style cornmeal soup"},"content":{"rendered":"<p><strong>Ingredients for 4 people<\/strong><br \/>\n2.5 pints (1.5 litres) bean cooking stock with a few beans<br \/>\n3.5 fl oz (100 ml) extra-virgin olive oil<br \/>\n10 oz (300 g) yellow cornmeal<br \/>\n3 tablespoons tomato pur\u00e9e (concentrate)<br \/>\n5 oz (150 g) black leaf kale, coarsely chopped<br \/>\n3.5 oz (100 g) carrot, celery and onion, finely chopped<br \/>\n7 oz (200 g) pumpkin, to be added to the kale (optional)<br \/>\nparsley<br \/>\n2 cloves garlic<\/p>\n<p><strong>Method<\/strong><br \/>\nBring the bean cooking stock to the boil in a large pot. Meanwhile, saut\u00e9 the carrot, celery and onion in the oil with the parsley and garlic.<br \/>\nAdd the tomato pur\u00e9e. Remove from the heat and press through a fine-mesh strainer, then add to the boiling stock.<br \/>\nAdd the black leaf kale and the pumpkin, cut into small pieces, if desired. Cook for about 15 minutes. Season with salt.<br \/>\nGradually sprinkle in the cornmeal, constantly stirring with a wooden spoon.
