{"id":22973,"date":"2021-05-12T10:38:45","date_gmt":"2021-05-12T08:38:45","guid":{"rendered":"https:\/\/www.terredipisa.it\/?post_type=ricetta&#038;p=22973"},"modified":"2021-05-12T10:38:45","modified_gmt":"2021-05-12T08:38:45","slug":"zuppa-pisana-pisa-style-soup","status":"publish","type":"ricetta","link":"https:\/\/www.terredipisa.it\/en\/ricetta\/zuppa-pisana-pisa-style-soup\/","title":{"rendered":"Zuppa Pisana &#8211; Pisa Style Soup"},"content":{"rendered":"<p><strong>Ingredients for 6 people<br \/>\n<\/strong>1 lb (500 g) fresh &#8220;piattelle&#8221; beans<br \/>\n1 stalk celery, finely chopped<br \/>\nday-old country bread<br \/>\n1 tablespoon tomato pur\u00e9e (concentrate)<br \/>\n1 bunch black leaf kale, finely shredded<br \/>\n1 red onion, cut into thin rings<br \/>\n3 courgettes (zucchini), cut into rounds<br \/>\nextra-virgin olive oil<br \/>\n1 spring onion (scallion), finely chopped<br \/>\n1 carrot, finely chopped<br \/>\nSalt and pepper<\/p>\n<p><strong>Method<\/strong><br \/>\nBoil the beans in a large pot of salted water with a few sage leaves until cooked. Remove the sage and set aside 2-3 ladlefuls of beans.<br \/>\nPress the remainder through a fine-mesh strainer to make a thick pur\u00e9e. Saut\u00e9 the spring onion, celery and carrot in the oil in a saucepan.<br \/>\nAdd the black leaf kale. Season with salt and pepper. Stir in the tomato pur\u00e9e diluted in warm water.<br \/>\nAdd the courgettes and continue cooking for 30 minutes until tender. Add the bean pur\u00e9e. Cook over very low heat for another 30 minutes.<br \/>\nPlace a layer of bread in a tureen and pour over the hot soup. Top with the whole beans that you set aside.<br \/>\nWait until the bread has almost completely absorbed the soup.
