{"id":22958,"date":"2021-05-12T10:17:34","date_gmt":"2021-05-12T08:17:34","guid":{"rendered":"https:\/\/www.terredipisa.it\/?post_type=ricetta&#038;p=22958"},"modified":"2021-05-12T10:17:34","modified_gmt":"2021-05-12T08:17:34","slug":"risotto-alle-arselle-risotto-with-clams","status":"publish","type":"ricetta","link":"https:\/\/www.terredipisa.it\/en\/ricetta\/risotto-alle-arselle-risotto-with-clams\/","title":{"rendered":"Risotto alle arselle &#8211; Risotto with clams"},"content":{"rendered":"<p><strong>Ingredients for 4 people<br \/>\n<\/strong>2.5 lb (1.2 kg) clams<br \/>\n14 oz (400 g) rice<br \/>\n3 tablespoons extra-virgin<br \/>\nolive oil<br \/>\n2 cloves garlic, onion, carrot,<br \/>\ncelery and parsley,<br \/>\nfinely chopped<br \/>\n3\/4 oz (20 g) dried mushrooms<br \/>\n5 tablespoons butter<br \/>\nsalt and pepper<\/p>\n<p><strong>Method<\/strong><br \/>\nPlace the clams in a colander under running water to remove any grit. Soak for about 2 hours, changing the water several times.<br \/>\nSoak the mushrooms in warm water until softened. Drain and coarsely chop.<br \/>\nTransfer the clams into a large pot and cover with 2.5 pints (1.5 litres) of water. Heat until the clams open up. Drain, reserving the<br \/>\ncooking water. Remove the shells.<br \/>\nSaut\u00e9 the garlic, onion, carrot, celery and parsley in the oil in a frying pan until softened. Add the clams and mushrooms. Season with<br \/>\npepper and add a little of the reserved cooking water (having strained it to remove any grit). Cook for a few minutes.<br \/>\nAdd the rice and cook, stirring constantly and gradually adding the remaining cooking water.
