This is the essence of <strong>\u201cCaseifici Aperti\u201d: <\/strong>an event now in its fourth year, offering free guided tours of the Consortium\u2019s dairies to learn the secrets of cheese-making.<\/p>\n<p><strong>This year there is a major new development: the initiative will begin in May but will continue throughout June and July.
