{"id":11632,"date":"2019-07-28T06:06:46","date_gmt":"2019-07-28T04:06:46","guid":{"rendered":"https:\/\/www.terredipisa.it\/?post_type=attrazione&#038;p=11632"},"modified":"2023-10-03T12:43:39","modified_gmt":"2023-10-03T10:43:39","slug":"amaretto-cake-santa-croce","status":"publish","type":"attrazione","link":"https:\/\/www.terredipisa.it\/en\/attrazione\/amaretto-cake-santa-croce\/","title":{"rendered":"Santa Croce sull&#8217;Arno | The &#8220;amaretto&#8221; cake"},"content":{"rendered":"<p><em>It is true that the history of <a href=\"https:\/\/www.terredipisa.it\/en\/territory\/santa-croce-sullarno\/\"><strong>Santa Croce sull&#8217;Arno<\/strong><\/a> is closely linked to its tanneries, but it is also linked to a <strong>delicious cake <\/strong>with a bitterish taste, shaped like a tiny &#8216;volcano&#8217; with a burnished top, the amaretto.<\/em><\/p>\n<p>The <strong>amaretto di Santa Croce<\/strong> probably originated in the 19th century: it was the <strong>nuns<\/strong> of the Santa Cristiana convent who started producing it at the instigation of the Duchess Maria Luigia of Austria who influenced the craft activities of many convents.<\/p>\n<p>It seems that amaretto was given to benefactors as early as the 13th century during the Christmas festivities. The recipe has remained unchanged, the <strong>ingredients<\/strong> that make amaretto special are always three: <strong>finely chopped almonds, sugar and eggs<\/strong>. Some add a little liqueur or grated lemon peel to the mixture, others sprinkle a snowfall of icing sugar on the &#8216;top&#8217; of the amaretto. These are just small variations of the biscuit come out of the convent in the 20th century, and not only at Christmas time.<\/p>\n<p>The local bakeries have set up an <a href=\"https:\/\/www.terredipisa.it\/en\/events\/26th-fair-of-the-amaretto-of-santa-croce\/\"><strong>Amaretto Festival,<\/strong><\/a> which takes place on 8 December, the anniversary of the Virgin Maria apparition to Santa Cristiana in 1278.
