Imagine a soft cream made with\u00a0white\u00a0rice, dark chocolate, pinenuts, candied fruit, raisins\u00a0<\/strong>and\u00a0spices\u00a0<\/strong>in a\u00a0shortcrust pastry pie<\/strong>.\u00a0It is called the “Torta co’ bischeri” and it’s a traditional cake of the\u00a0Pisa<\/strong>\u00a0province.<\/p>\n

The\u00a0“Torta co’ bischeri\u201d<\/a>\u00a0is \u00a0originally from\u00a0Pontasserchio<\/strong>, north of Pisa, and it was first made around the beginning of the sixteenth century as an offering to the pilgrims who visited the town. The famous Via Francigena passes through Italy, 400 km (250 miles) of which are in Tuscany. When the pilgrims stopped in a city or small town, the locals used to treat them with respect, finding\u00a0 accommodation, food and beverage.<\/p>\n

This delicious cake is characterized by the folds of pastry dough made on the outer edge of it, which are called\u00a0“bischeri” <\/strong>because they are similar in appearance to guitar tuning heads.\u00a0<\/strong>Since 2007, it has had a\u00a0quality brand <\/strong>with a rigorous specification, according to the area of production, the origin of\u00a0raw materials\u00a0and the requirement of specific pinenuts that must come from the Regional Park of San Rossore Migliarino Massaciuccoli.<\/p>\n
